Instant Pot BBQ Brisket

Summer is here, and that means BBQ season has arrived! The smell of grilled meats fills the neighborhood, people are outside enjoying life, and beautiful flowers are in bloom. Here in Arizona, it is hot, and sometimes it is just too hot to go outside to grill. This Instant Pot BBQ Brisket recipe beats the heat and it cooks in about an hour.

BBQ Brisket Meal

The Instant Pot is first used to sear the brisket, and then it pressure-cooks for 50 minutes. Then, the pressure cooker creates a wonderful sauce for the brisket to bathe in before being served. I love using the Instant Pot for this recipe because it tenderizes tough cuts of meat quickly with the same slow cooked flavor.

The last step, returning the brisket to the Instant Pot with rendered liquids, is optional. The brisket is tender and delicious without this step, but I do not like to waste good flavor. You will make a BBQ sauce with some pantry ingredients and the remaining brisket rub from the recipe, so you still have a tasty sauce to use.

BBQ Brisket Rub

I love sliced brisket, but feel free to shred it instead if you prefer it that way. If you have any brisket leftover, it is great to use in so many applications. You can make a BBQ brisket sandwich, chop it up and make beans with it, or even add it to macaroni and cheese. Nachos, quesadillas, and salads are great option to use up leftovers too!

This Instant Pot BBQ brisket is definitely on the top of my list this summer. Even if I’m not outside grilling and enjoying the sun, I still get amazing aroma and flavor that brings me summer feels and BBQ vibes. Instant Pot BBQ Brisket

Tender BBQ rubbed brisket, cooked in a tangy sauce and served with homemade BBQ Sauce

  • Instant Pot or Pressure Cooker


  • 2.5 lb brisket
  • 1 yellow onion, sliced into thick rings
  • 1/4 cup apple cider vinegar
  • 1/2 cup water

Brisket Rub

  • 2 tbsp brown sugar
  • 1 ½ tbsp smoked paprika
  • 1 tbsp kosher salt
  • ½ tbsp ground black pepper
  • 1 tsp granulated garlic
  • 1 tsp coriander
  • ½ tsp cayenne pepper

BBQ Sauce

  • Remaining Brisket Rub
  • ¾ cup ketchup
  • 1 tbsp mustard
  • 1 tbsp Worcestershire sauce
  • 1 ½ tbsp molasses
  • ½ tbsp hot sauce
  • 1 ½ tbsp brown sugar
  • 1/4 cup apple cider vinegar


  • Before starting, make sure that you let the brisket come to room temperature.
  • Stir all brisket rub ingredients until well combined.
  • Use enough spice rub to cover the entire surface of the brisket and rub it into the meat as best you can. Reserve the remaining rub for the BBQ sauce.

  • Set your Instant Pot or pressure cooker to Saute and sear the brisket for 3 minutes on each side. Set brisket aside once seared.

  • Pour 1/2 cup of water into the hot Instant Pot and deglaze the pan, removing any brown bits from the bottom with a wooden spoon or spatula.
  • Cancel the Saute function, and layer the sliced onions in the bottom of the Instant Pot. Place seared brisket on top of the onions, with the fat side up.
  • In a small saucepan, add the ingredients for the BBQ sauce, including the rest of the spice rub. Set on medium heat until it starts to bubble. Stir well.

  • Combine 1/4 cup of apple cider vinegar with 1/2 cup of BBQ sauce. Stir well, and pour over the brisket.
  • Place in on Instant Pot and turn to Sealing. Set to pressure cook for 50 minutes.
  • Continue cooking the rest of the BBQ sauce on low while the brisket cooks.
  • Once the 50 minutes is over, manually release the pressure from the Instant Pot. Remove brisket and let rest for at least 10 minutes.
  • Turn the Instant Pot to the Saute function once the brisket is removed. Bring the remaining liquid to a boil and reduce while the brisket is resting.
  • Slice the brisket against the grain. Turn off the Instant Pot and return the sliced brisket to the reduced liquid.
